The decoration is the best part and you can use anything you have available – sprinkles, edible glitter, colored gel and even small candies. And of course – making the frosting is the tricky part. No-chill almond Easter sugar cookies recipe
The ingredients for about three dozens of these Easter sugar cookies:
1 cup unsalted butter (room temperature)
1-1/2 cups white sugar
1 large egg
2 teaspoons almond extract
1-3/4 cups all-purpose flour
1 cup white whole wheat flour
2 teaspoons baking powder
1/2 teaspoon kosher salt
non-stick cooking spray
Method: Preheat oven to 400 degrees F (250 C). Beat butter and sugar, both at room temperature, in a mixer bowl for about five minutes until fluffy and light in color. Add in egg and almond extract, and mix until combined. Mix all the flour with the baking powder and salt. With the mixer on low, gently add the flour to the butter mixture until it is all incorporated. Make sure to scrape down the sides and bottom. When the dough is ready lay it out onto a lightly floured surface. If the dough is a little crumbly, simply knead together with your hands until it is formed. Use a rolling pin and roll out the dough. If it’s too sticky, simply add a little flour to firm it up. Roll out dough until it’s about 1/4-inch thick (0,5 cm), dip cookie cutter in flour and cut out shapes. Spray a large cookie sheet or sheet pan with cooking spray, and gently lay out cookies on sheet pan, leaving 2 inches between cookies. Bake for about eight minutes until lightly browned, and let cool completely before you start decorating.
Vanilla frosting recipe for decorating Easter sugar cookies
1 stick (8 tablespoons) unsalted room-temperature butter
3 cups powdered sugar
3 to 4 tablespoons milk
2 teaspoons vanilla- or almond extract
1 pinch salt
Method: Add all ingredients into a large bowl and mix until fluffy and combined. If the frosting is too thick, add more milk. If it’s too thin, add a little more powdered sugar. If you wish to add coloring, simply split the frosting into several different bowls and add a few drops of coloring per bowl. Stir each bowl with a clean butter knife until color is mixed into the frosting. Now you are ready to decorate your Easter sugar cookies . Ask the children to help and remember to have fun!
